Chocolate Mint Brownies ... Yum!

  

Batter

1 cup butter

2 cups sugar 

4 eggs

1 tablespoon vanilla

1 teaspoon peppermint extract

1/2 cup cocoa

2 cups flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

3/4 cup chopped pecans

Frosting

1/4 cup melted butter

1/4 cup cocoa

3 cups powdered sugar

1/4 cup milk

1/2 teaspoon vanilla

                  

 
  

I love to cook and bake.  People frequently ask me fo my Chocolate Mint Brownies recipe, so here it is.  It is a moist brownie falling between a cake-like and fudge-like recipe.  This recipe was adapted from the Lunchroom Ladies 50 year old Best Darn Brownies recipe. 

 
  

Cream butter, sugar, eggs, and flavorings.  Stir in cocoa, flour, baking soda, and baking powder.  Fold in pecans.  Batter should be silky smooth.  Using the back of a spoon dipped in water, spread evenly in greased and floured 9x13 inch pan.  (I prepare pan with Baker's Joy non-stick spray, works like a charm.)  Bake in a 350 degree oven for about 28 minutes, or until toothpick inserted in center comes out partially clean but not goopy, but batter has not yet pulled away from sides of pan.  Combine frosting ingredients, frost brownies while slightly warm.  Sprinkle with colored sprinkles or chopped M&M candies if desired.  Cut into squares when cool and store in covered containers; keep layers separated using plastic wrap.  The brownies freeze wonderfully, so you can always have some on hand.  Extra yummy warmed up with a scoop of ice cream. 
   
Brownie Recipe Variations

Chocolate Brownies

Omit peppermint extract and increase vanilla extract to 4 teaspoons.

Mounds Brownies

Decrease chopped pecans to 1/4 cup.  Add 1 cup sweetened flaked coconut to batter with pecans.  Sprinkle with white colored sprinkles.  Mounds Brownies may take a minute or two longer to bake.

Chocolate Peanut Butter Brownies

Make recipe for Chocolate Brownies.  Before frosting, spread a layer of Creamy Peanut Butter on top of brownies.  Immediately top with frosting.

Chocolate Almond Butter Brownies

Make recipe for Chocolate Brownies.  Before frosting, spread a layer of Creamy Almond Butter (I use Jif) on top of brownies.  Immediately top with frosting.

Toffee Brownies

Make recipe for Chocolate Brownies.  Sprinkle chocolated covered toffee pieces (either purchased by the bag like chocolate chips, or crushed Heath candy bars) on top of frosting immediately after frosting.
